I'm done with the 'always use a microplane for garlic' rule after a night in a Tokyo izakaya

I was working a stage at a small place in Shinjuku, and the head chef made me crush garlic with a heavy knife and the heel of my hand for a whole service. He said the microplane makes it too watery and bitter, and the paste from crushing has a deeper, sweeter flavor. I fought him on it for a week, but after tasting the difference in our tare sauce, I had to admit he was right. Does anyone else have a 'fancy' tool they've ditched for an older, simpler method?

My 'eat only soup for a month' plan ended in a grocery store aisle

So, I was about two weeks into this thing where I was only eating homemade vegetable soup, convinced it was the key to losing weight. I was at the big grocery store on Oak Avenue, trying to buy more celery, and my vision just went all spotty and gray. I had to grab onto the freezer door to stay up. My hands were shaking so bad I dropped my list. I think my body just ran out of real fuel, you know? All that broth and veggies with no good fats or protein to back it up. I had to sit right down on the cold floor for like ten minutes before I felt okay enough to walk out. Has anyone else had a diet backfire so hard it just shut your system down like that?

My old boss told me to never use a magnesium float on a garage floor

He said it would always leave marks and a steel float was the only way to go. I listened for years, until a job last fall in Tacoma where the mix was setting up way too fast. Out of desperation, I grabbed my mag float and it worked perfectly, no marks at all. The trick was keeping it super clean and using a light touch. I've used it on three garage floors since with zero issues. What's one piece of old-school advice you guys ended up tossing out?

PSA: People keep asking the same basic questions without searching first

I run a dog grooming shop and see this on grooming forums all the time. Someone will post 'how do I trim a poodle's face' when there are 50 videos and guides already up. It clogs the feed. I spent 30 minutes yesterday just scrolling past repeats. It matters because good answers get buried. How do you get folks to check the pinned posts or do a quick search? Is it just laziness?

I swore by tap water for ferments, but a dead scoby proved me wrong.

Now I always use filtered water or let tap water sit to protect my ferments.

A close call with file backups that changed my routine

I used to only backup my CAD drawings once a week, thinking it was no big deal. Then my computer crashed right after I finished a big shop drawing. I had not backed up for three days and almost lost all that work. It was a huge scare trying to get my files back. I managed to recover an older version, but I had to redo a lot of details. Now I make a backup to an external drive after each drawing session. It adds maybe two minutes to my day but keeps my mind at ease. Seriously, set a reminder or something so you don't end up like I did.
