I read that sauerkraut can have more vitamin C than an orange

I saw this in a library book about food history from the 1800s. It said sailors used fermented cabbage to prevent scurvy on long trips. My own batch from last month has about 60 mg of vitamin C per cup. Has anyone else checked the vitamin levels in their ferments?

Oh wow, that's actually really cool to know. I mean, I always just liked sauerkraut for the taste, but hearing it was that important for health back then makes me appreciate it more. It's kind of amazing how people figured that stuff out without modern science. I never thought to check the vitamin levels in mine, but now I'm curious. Makes that jar in my fridge feel like a little superfood.

Read somewhere that the old sailors called it "Dutch courage" for a reason.

My buddy Mark got super into making his own sauerkraut last year. He bought this giant crock and like twenty heads of cabbage. He was testing the vitamin C with these little strips, saying his homemade stuff had way more than the store jar. His whole fridge smelled like a deli for a month, but he didn't get sick once that winter.
