Question about the sauerkraut at the new market in Portland
I was at the Pine Street Market in Portland yesterday. They had a whole section for fermented foods. Their house sauerkraut was $16 for a 16oz jar. That seemed really high to me. Is that a normal price for a small batch product? What makes it worth that much?

Ever made your own kraut? A head of cabbage is like three bucks... salt is basically free. Even with organic stuff and fancy jars, $16 a pint is wild. I'd only pay that if it had truffles or gold leaf in it or something. For that price, it better ferment itself and do the dishes.

My buddy tried making his own once after seeing a video. He ended up with a jar of purple mush that smelled like a gym sock left in a hot car (he used red cabbage and guessed on the salt). The whole kitchen had this funky cloud for days. He buys the expensive stuff now and calls it the "idiot tax.

Time is money though. Not everyone wants to mess with jars and waiting weeks. Paying for the work and the shelf space makes sense to me.
