After I bombed a first date by taking her to a loud bar where we couldn't hear each other, I tried a quiet coffee shop with a shared pastry and we ended up talking for 3 hours straight, has anyone else found a simple setting change that completely fixes the awkwardness?

That loud bar was probably a bad choice to start, but a quiet coffee shop isn't automatically a fix. I've had three hour conversations in noisy diners and awkward silences in dead quiet cafes. The setting matters way less than if you both actually want to be there. If she's interested, you could talk for three hours in a parking lot. If she's not, the quietest teahouse in the world won't save you.
