A retired butcher in Tulsa changed how I see my cutting table
Stopped by an old shop last month and this 70 year old guy told me I was obsessing over sharpening when I should be looking at my grip. He showed me how he holds a knife with two fingers on the spine, totally different pressure. Been 15 years doing this and that one chat made me wonder how many other habits I picked up wrong, anyone else get humbled by an old timer like that?

Two fingers on the spine? That sounds backwards, how'd he prove it works?

Try it on a tomato next time. Just pinch the spine near the blade and keep your wrist loose, you'll feel way more control. That grip thing sounds weird but it stops you from choking up too hard and losing the cut.
