The hype around 'The Bear' is missing the point about its pacing

Everyone talks about how intense and fast it is, but I think the real binge factor is in the quiet moments between the yelling. The episode 'Fishes' is 66 minutes of family tension that builds slower than any restaurant rush. People call it a stressful watch, but that's because they're waiting for the next kitchen meltdown instead of seeing the character work. Has anyone else found themselves rewinding just to catch the dialogue in those calmer scenes?

Exactly, the quiet parts are what make the yelling mean something. My question is, do you think the show would work at all if it was just the kitchen chaos? Without those slow family dinners or Carmy staring into a fridge, it would just be noise. The pacing feels like real life, where big fights come from small things piling up for years.

Saw a review that called the quiet scenes the show's secret sauce.

That fridge stare in season two lasted a full minute.
