Met a pitmaster at a gas station who changed how I trim brisket
I was fueling up near Lockhart, Texas last fall and this older guy sees my smoker in the truck bed. He just walks over and says 'you're trimming too much fat off the point end, you're losing all your moisture.' Spent 10 minutes showing me his method right there on the tailgate. Has anyone else gotten random advice from a stranger that actually stuck?

Did he tell you to leave a little more fat on the flat side too... I always wonder about that balance.

Used to trim it all off myself but now I get why he says to leave a bit.
