Had a pitmaster in Lockhart tell me my trim was off

I was at Black's BBQ watching a guy break down a brisket and he pointed out I was leaving way too much fat cap on the flat. I changed to a 1/4 inch trim and now my bark sets way better and it cooks about an hour faster. Anyone else had to unlearn bad trimming habits?

Hannah's hoodie comment is gold lol. So that 1/4 inch trim, do you still leave a thicker cap on the point or just trim it all the same?
