I bake better bread when I don't knead it at all

My loaves come out perfect every time with this method. It saves me so much effort and still gets rave reviews.

It's not really being lazy, it's just a different kind of work. You're trading kneading time for a much longer fermentation time.

Totally! I switched to no-knead a year ago and it was a game changer. My dough just sits on the counter overnight and bakes up with huge holes and a great crust. It feels like cheating but the results are so good.

Guess I've been putting in unnecessary work all this time. The secret to good bread was just being lazy.
