Warm eggs straight from the fridge wrecked my sponge cakes for 2 years

Last month I cracked open a 6 egg batch for a birthday cake and they were ice cold, curdled the butter in about 10 seconds. That's when it hit me, every airy sponge I'd made since 2021 had that dense bottom layer. I always thought my oven was the problem, but it was my own laziness skipping the 30 minute warm up on the counter. Now I put the eggs in a bowl of warm tap water for 5 minutes and the difference is night and day. Has anyone else had a simple temperature habit mess up their bakes for that long?

Wow, this hit me right in the baking soul! I had the exact same thing happen with my pound cakes for like a year and a half. I kept blaming my oven and even bought a new thermometer, but nope, it was just my fridge-cold eggs seizing up the butter every single time. The warm water trick is a total game changer, I do it now while I'm measuring out my dry ingredients so it doesn't even slow me down.

Is it crazy how one little thing like egg temp can wreck a whole bake? @kimreed, same here with my biscuits. Cold butter straight from the fridge used to make them turn into hockey pucks. The warm water trick is a lifesaver, I do it before I even start mixing now.
