Showerthought: I dropped $200 on a fancy pH meter a few years back.

It saved a huge batch of sauerkraut from going bad, but now I just use the cheap strips and they work fine. Anyone else go back to the basics after splurging on gear?

Totally get that, @west.anna. I bought a fancy fermenting weight set and now I just use a ziploc bag of water.

Right? It's wild how intense it gets. I totally messed up a batch last month by not keeping everything under the brine and it was a total loss. The smell alone was a crime scene. Now I'm checking on it like three times a day, it's ridiculous.
