I thought hot mud was just for speed freaks until my last fix

Always stuck with pre-mixed because I figured hot mud was too tricky and not worth the hassle. Then I had a small patch that needed to be done and painted in one day, so I mixed a small batch of quick-set. It hardened fast with no shrinkage, and I could sand and paint right away. Now I keep a bag on the truck for any quick repair, especially in damp areas where drying time is a problem.

Pre-mixed still works for like 90% of jobs anyway.

Check the math on that 90 percent figure. Hot mud solves so many common problems like cracking and long dry times. It's worth trying just to see how much easier some jobs become.

You mentioned pre-mixed works for 90% of jobs, but that feels like an overstatement once you try hot mud. It sets quick with no shrinkage, which is a big help in damp rooms or when you're up against the clock. The original poster got it right, you can sand and paint so much faster. Why stick to one product when the other can handle problems pre-mixed can't? I grabbed a bag for my truck after a similar surprise and now I use it all the time.
