Instant coffee vs pour over, the difference showed up in my 6am routine

I spent 10 years defending instant coffee until I borrowed my sister's pour over setup in Portland last month. The first cup had actual flavor notes, like something I'd get at a shop, and it took about 4 extra minutes of my morning. I'm not saying everyone needs a fancy grinder, but if you haven't tried it side by side, you're missing out. Anyone else made the switch and never looked back, or am I just being extra?

My sister converted me last year, same exact story but with her Chemex. Took me 3 tries to taste the difference but now instant just tastes burnt... if that makes sense. The extra cleanup though, that part still gets me sometimes.
