For years I used a basic gooseneck kettle I got for $25, thinking it was fine. Last month I borrowed my friend's Stagg EKG with the built-in thermometer and timer. The difference in control was huge, especially for light roasts. I could keep the water at exactly 205 degrees and pour way steadier.
