PSA: tried brewing Ethiopian beans at 195 degrees instead of 200 and got a flat, sour cup
I spent $18 on a bag of Yirgacheffe last week and ruined the first batch because I didn't realize dropping 5 degrees would kill all the fruit notes, has anyone else messed up their water temp like this?

Eighteen bucks for Yirgacheffe and you went and boiled the soul right out of it... ouch. I did the same thing with a $22 bag of Gesha from a local roaster last month, thought I was being precise with a cheap thermometer and ended up brewing at 192 instead of 202. The cup tasted like hot lemon water with a side of regret. Five degrees really is the difference between a fruity explosion and a sad, flat mess. At least you only ruined one batch and not the whole bag like I did.
