Is cold brew actually worth the hype or just lazy coffee?
I spent 3 months making cold brew at home with a $15 mason jar setup and honestly, the smoothness was great but I missed the complexity you get from hot brewing. Now I'm wondering if all that steeping time is just covering up for cheap beans. What's your take - is cold brew a legit upgrade or just a trend?

What grinder are you using with your cold brew? Because that's usually the weak link when people say it's flat. I went through the same thing - got tired of the muted flavors after a few months and switched back to pourover. Cold brew is good for covering up cheap beans, but it also kills a lot of the subtle notes in quality single origins. If you want the smoothness with more character, try making Japanese iced coffee instead. Brew hot directly onto ice, cuts the bitterness without losing the complexity. That's what I do now when I want a cold drink.
