Rant: Forgot to plug the cooler back in overnight before a Friday service
Was prepping a 40 quart stock pot of chicken stock Wednesday. Got distracted by a delivery. Left it on the speed rack instead of the walk-in. Came in Thursday morning and it was sitting at 62 degrees. Had to dump the whole thing. 8 pounds of bones and 12 hours of simmering down the drain. Anyone else have a brain fart moment that cost you a whole prep shift?
