Watching a guy break down a whole hog at the Indiana State Fair changed how I cut
Stood at the Purdue ag tent last month and watched a 74 year old butcher seam out a shoulder in about 90 seconds using nothing but a boning knife and his thumb. I had been fighting shoulders with a saw for years, so I went home and tried his way on a 210 lb hog and the yield was night and day. Any of you ever pick up a trick from a demo like that?
That thing where you watch the old guys use their thumb as a guide is the part most people miss. I saw a guy at the Marshall County fair do the same thing on a shoulder and he kept saying the blade follows the bone, not the other way around. What got me was how little he actually cut. Maybe 6 or 7 real slices on a whole shoulder and the rest was just pulling with his hands. I tried it on a 180 lb gilt last fall and my yield went up around 4 lbs just off the trim. The demo taught me more in 10 minutes than any video ever did.
