Just passed 10,000 racks cut and I think the shortrib hype is out of control
I've been doing this 14 years and hit 10k racks last month, but everyone acting like shortribs are the best cut on the cow is straight up wild. Has anyone else noticed how many people buy them just because they saw a video online instead of asking what's actually good for their meal?

I've had a few customers at my shop (I groom dogs, not butcher them, but same kind of hype cycle) swear up and down that shortribs are the only way to go. But honestly, what worked for me was just going back to basics. I started asking people what they're actually cooking - like, are they grilling or braising? - and suddenly they realize a chuck roast or a flat iron steak fits way better for most quick meals. The internet hype fades fast, but a solid cut like a sirloin or a tri-tip always delivers without the drama.

Yeah, have you tried asking them what they're actually cooking? Once I started doing that with my own meal planning, it was way easier to pick cuts that fit the time and effort I had.
