Crossed 1,000 lamb carcasses this week and it finally clicked

I hit my 1,000th lamb breakdown yesterday at the shop on Hawthorne Ave. For the first time, I could feel exactly where the blade should go on the front shoulder without even thinking. That muscle memory thing is real. Anybody else notice a big shift after a certain number of cuts?

No way, that's awesome! My buddy who works a deli counter said the same thing after he'd sliced like 800 ham legs for the holiday rush.

Oh yeah, that muscle memory thing is wild isn't it? I remember the first time I hit around 500 chickens for a catering gig and suddenly my wrist just knew where to go. The blade slid in perfect every time without me even looking. It's like your brain finally stops thinking and your hands just take over.
