Am I the only one who thinks the new 'fast set' mortar is more trouble than it's worth on a chimney rebuild?

I used it on a job in Springfield last Tuesday and the stuff went off in the bucket before I could even finish the second course, so now I'm debating if the speed is worth the waste versus just mixing smaller batches of the standard stuff.

Is it really that deep though? I've dropped bags plenty of times and they usually survive. Either your buddy's bag was already falling apart or he was being way too rough with it.
