Swapped my gas grill for a 22 inch Weber Kettle after 8 years, no regrets
I started with a propane grill back in 2015 because it was fast and easy. Used it twice a week, got decent results, but always felt like something was missing. Last spring my neighbor offered me his old kettle for $40 and I figured why not. First brisket took 11 hours and I babysat it like a newborn. But the bark and smoke ring came out better than anything I ever did on gas. Now I barely touch the propane tank. Has anyone else made the switch late and found charcoal is actually easier once you get the vents figured out?

Whoa, that 11 hour brisket story got me! The part people miss is how charcoal changes your whole relationship with time. With gas I was always running out to grab something or flipping too early because it felt too simple. With the kettle, the vents force you to slow down and actually taste the meat as you go. It turned grilling from a chore into a hobby for me, and that's the real win.
