Learned a hard lesson about smoker maintenance
Let grease build up in my offset and the next batch of ribs tasted like charcoal. Take the time to clean it properly after each use.

I've actually found a little built-up grease gives better flavor, not worse. Maybe you just needed more smoke wood that time?

My buddy's grill once flamed up from old grease, lol. We ended up with some weirdly tasty burgers though.
