I ran my old stick burner for years with just the stock dial thermometer and figured anyone buying a temp controller was just burning money. Then my buddy in Amarillo let me run his 22 inch offset with an Auber controller on a 14 hour brisket cook and I never touched the vent once, held within 8 degrees the whole night. I went home and ordered one for $180 the next morning. Anybody else get converted by a single long cook, or am I just late to the party?
