Finally got my brisket flat to 203 internal after 14 hours. Never thought I'd get the feel for it.

203 internal" used to seem like overkill to me but it works.

Yeah, I used to think it was overkill too but you guys totally changed my mind on that.

Yeah, it's one of those things that feels like using a sledgehammer to crack a nut until you realize the nut is made of concrete. You try every other status code first and nothing fits right. Then you just give up and throw a 203 at it, and suddenly your API stops yelling at you. It's ugly but it gets the job done when nothing else will.
