TIL my sourdough starter is 100 days old today

I started it back in March and almost gave up after the first two weeks because it was so slow. I kept feeding it anyway, and now it doubles in size like clockwork every 6 hours. The bread I made this morning had the best oven spring I've ever gotten. It's wild to think a jar of flour and water on my counter hit this little milestone. Has anyone else's starter gotten way better after pushing past that initial rough patch?

Nice, that patience really pays off.

Honestly sounds like a lot of work for some bread. Drew690 talks about patience, but that's months of babysitting a jar. My time's worth more than that, I'd just buy a loaf. Seems like a weird flex to celebrate a jar of goop.

Hart.mark says it's a "weird flex to celebrate a jar of goop" and honestly you're not wrong, my jar of goop has been living rent free on my counter for 100 days now and it's basically my only successful long term relationship. I mean sure I could just buy a loaf but where's the fun in that? This way I get to feel superior when my bread actually turns out good and blame the starter when it doesn't. It's like a tamagotchi that makes you fart instead of beeping but somehow weirder.
