Overheard a customer at the counter say sourdough starter is just flour and water and anyone can do it
After 8 years of baking professionally in Portland I realized that person had no clue about the daily feedings, temperature control, and troubleshooting a starter that goes dormant, so what do you tell someone who thinks baking is simple when they ask for shortcuts?
but sure, anyone can throw flour and water together and call it a starter, right? just like anyone can dump paint on a canvas and call it a masterpiece (spoiler: it doesn't work that way). i guess some people are just born knowing everything about the patience and science behind a simple loaf of bread.
