Check your oven thermostats, mine drifted 40 degrees over 3 years
Last month my sourdough loaves started coming out pale and gummy no matter what I did. Turned out my oven's built-in thermometer was reading 375 when the actual temp was 335, and I only caught it because I borrowed a friend's digital probe in Des Moines. I had been adjusting recipes and blaming my starter for months. Anyone else had a slow oven drift that snuck up on them, and what brand of independent thermometer do you trust?

My 2005 electric range has never drifted a single degree in 18 years of weekly baking. Ovens are simple machines, and most temperature complaints come from people who never test them properly or who bake during a power surge or a hot kitchen. If your bread is off, check your starter activity and your proofing times before you go spending money on a fancy thermometer that needs its own calibration.
