Am I the only one seeing more bakers ditch the scale for flour?
My recent cake sunk in the middle because of it.

Seriously though, I read a thing from a cookbook author who tested this. She had ten people scoop a "cup" of flour from the same bag. Every single one was a different weight, some by over an ounce. That's a huge difference in baking. Your sunk cake is proof. It's not about skill, it's about being exact. That's why actual pros always use a scale.
