Went from rare to medium rare after a steak in Austin, still conflicted
So I've been a rare guy my whole life. Medium rare was for people who liked their meat chewy. Last month I'm at this place in Austin, buddy orders a ribeye medium rare, I order rare. We swap bites halfway through and I gotta say, his had way more flavor coming through. The fat rendered better, the seasoning actually came through. Mine was good but tasted more like raw beef than steak. I've tried medium rare twice since then at home and it's growing on me, but part of me feels like a traitor to the blue rare crowd. Has anyone else switched sides after one specific meal, or am I just getting old?

Wait, you swapped bites halfway and his tasted more like actual steak?
