Tbh I thought my kimchi was ruined after leaving it out for 5 days in Phoenix heat

My cousin in Tucson left a jar of pickles in her car trunk for a week last summer. They basically turned into fizzy brine soup.

My trunk in Phoenix did that to my salsa last July.

Trust your nose, if it smells sour and funky but not rotten, it's probably just super fermented and still good.
