My $15 thrift store chef knife beats my $80 one from Target hands down

I've been cooking at home for years and always thought you had to spend a ton to get a decent knife. Picked up a beat up old Wusthof at a garage sale for $15, sharpened it myself with a $10 stone. Ran it side by side against my fancy Target knife chopping onions and the cheap one sliced through way cleaner. The handle feels better in my hand too, not slippery like the plastic one. Anyone else find a hidden gem at a thrift store that crushed the expensive version?

This whole experience speaks to something bigger, where paying more doesn't always mean getting more. Seems like half the stuff we buy is marked up for branding and packaging, not actual performance. A garage sale find that outperforms new retail gear just feels like a little win against that whole system.

You ever notice how the stuff we think is junk ends up being the best? @amy154, my buddy found a beat-up cast iron skillet at a flea market for five bucks last summer. Thing was rusty and looked like someone used it as a boat anchor. He spent a weekend cleaning it up with vinegar and steel wool. Now it's his go-to for everything, steaks come out perfect, no sticking. Meanwhile, he's got a fancy nonstick pan from some brand that cost him fifty bucks, and that thing's already scratched to hell. Totally agree that half the time it's just paying for the name.
