After 8 years of avoiding them, I finally tried those spiralized veggie noodles and legitimately prefer them to pasta now.

Bought a cheap hand spiralizer on clearance for $4 and made zucchini noodles with homemade pesto, found they held the sauce better without getting mushy, so has anyone else had a similar 180 on a food trend they swore they'd hate?

$4 spiralizer is a steal. I got a similar cheap one and it's been solid for 2 years now. That pesto sounds legit. I've found the key with zucchini noodles is salting them first and letting them sit on paper towels for 15 minutes. Gets a ton of water out so they don't turn into soup. The sauce sticking thing is real too. I think it's the rougher surface of the veggie noodles compared to slick pasta. Once you get the prep down it's hard to go back to regular pasta.

Holding sauce better without getting mushy? What kind of pesto was it?
