Why does nobody talk about grinding beans right before you brew?
I used to buy ground coffee from the store. It was fine. Then my friend in Austin gave me a hand grinder for my birthday. First cup I made with fresh grounds tasted totally different. Like the coffee was brighter, more alive. Now I grind a small batch every morning. Anyone else notice a huge jump in flavor from grinding fresh?

Isn't it wild how much air is the enemy? Ground coffee starts losing flavor crazy fast because it's exposed. That first hit of fresh grounds is like opening a window in a stuffy room. You're tasting the actual coffee oils before they go flat. Once you notice that difference, there's just no going back to the pre-ground stuff.

My old drip machine with pre-ground stuff just made brown water, honestly. After reading what @terry_lewis21 said, I get it now. That first week with a grinder, the smell alone in my kitchen was worth it. It went from a chore to my favorite part of the morning.
