Does freshness actually matter that much for coffee?
I read a post from a roaster in Portland who said coffee is best 7-14 days after roasting. But I also see people online claiming you need to use it within 48 hours or it's garbage. That's a huge difference - a whole 12 days. I did my own test with beans from a local shop. Drank one batch at day 3 and another at day 10. Honestly couldn't tell much difference in taste between them. Anyone else find the whole freshness debate overblown or am I missing something?

Wait, doesn't 48 hours mean the coffee hasn't even degassed yet?

...and honestly, I think people get way too worked up about the whole freshness thing. I've been drinking coffee for years and I've done my own lazy tests with beans from the same bag at day 2 and day 15 and couldn't pick out a winner blindfolded either. Maybe if you're some super taster with fancy equipment you might notice, but for most of us just making a morning cup, it's probably fine. Your mileage may vary, but I'd say use what tastes good to you and don't let the internet stress you out about a 12 day window.
