My breakfast shift runs smoother with non-stick pans, but the crew calls it cheating

Can you share if using non-stick over cast iron for eggs is really a bad move in a pro kitchen?

Heard about a kitchen where non-stick was banned, but the eggs suffered.

Grab a non-stick for eggs, trust me, they're not worth the fight.

That old diner by my place used only cast iron and their eggs were a sticky mess half the time. @the_paul is right about the eggs suffering, so if non-stick makes your shift run smooth, tell the crew to get over it. A good breakfast service beats old-school pride any day.
