I was cleaning out my old prep station and found a note from my first chef

It was tucked behind a shelf and just said 'taste everything twice, once for you and once for the guest'. That simple line from 8 years ago in Chicago still guides my plating every day. What's the best piece of advice you ever got written down?

What about advice that was never written down but you still remember word for word?

Found a sticky note on my old knife roll that just said "sharp knives are safe knives." My mentor wrote it after I nicked myself with a dull blade. That stuck with me more than any fancy technique he showed me.

Right? That's the one lesson that actually matters. I cut myself way worse with a dull paring knife than I ever have with a sharp one. Your mentor was a smart guy.
