Had a regular at the diner tell me I should quit and go to culinary school

This old guy named Frank who came in every Tuesday for 6 years said my eggs benedict was better than any he had in NYC, and that stuck with me more than any chef I ever worked under.

Just follow Frank around until he convinces every cook to go to culinary school.

Just follow Frank around" sounds like a way to avoid making your own decisions. One compliment from a regular customer isn't a career plan, even if it feels good in the moment. Lots of talented home cooks got told the same thing and ended up stuck in kitchens hating their lives because school and a real kitchen are nothing alike.

Take it from someone who's seen this play out a bunch of times. I'd add that @danielhenderson has a point too. Get a real restaurant job first, like a few months on the line, before you even think about dropping money on culinary school. That'll tell you real quick if you actually want the life or just the idea of it.
