A stopwatch on the line is actually pretty normal at busy spots, lot of kitchens live and die by ticket times. The tweezers part is where I'd push back a little. Plating with tweezers doesn't automatically mean the food is gonna be better, it can honestly make some dishes look stiff and overworked. I get why the stopwatch stuck with you, time pressure plus tiny tongs is a wild combo. But a cook who's fast and careful with his hands can plate just as clean without feeling like he's doing surgery.
