An old line cook told me to stop scraping my flat top with a metal scraper
I worked at this diner in Brooklyn for 2 years and always scraped the hell out of the flattop after service. One night a guy who'd been cooking since the 80s pulled me aside and said I was ruining the seasoning. He showed me to use a brick and oil instead. Took me about a week to get used to it but now the surface is way more non-stick and I dont have to reseason every few days. Anyone else get told to ditch the metal scraper?

Guess my scraper was more of a seasoning destroyer than a grill tool.

Is it really that serious though? @hugo_bennett your scraper probably wasn't doing that much damage unless you were really digging in there.
