The old guy at the meat counter in Cincinnati said 'never trust a sausage that's too cheap' and I can't stop thinking about it
I was at a small shop in Cincinnati getting some pork butt for a weekend smoke and the guy behind the counter, probably 70, said that to me while I was paying. He said a sausage that's priced way under everyone else usually means fillers, water, or meat that's been sitting too long, and the seasoning is there to hide it. I've been running my own small side business selling breakfast links for about 8 months now and I've been trying to figure out why my costs feel higher than what I see at the big stores. Starting to think I'm actually doing it right and everyone else is cutting corners. Any of you run into customers who think your prices are nuts because they're used to the cheap stuff?
