Just found out my grandpa's old cleaver predates my shop by 40 years
I was cleaning out a drawer last week and pulled out his old cleaver. Looked up the stamp on the blade, turns out it was made in 1947. My shop opened in 1987. That thing has seen more sides of beef than I have in 20 years behind the counter. Makes me think about how much hand sharpening mattered back then compared to my electric grinder now. Anybody else use a family tool that's older than their whole operation?
My dad's 1950s carbon steel boning knife still hangs in my kitchen, and it takes an edge way better than the stainless stuff I bought ten years ago. That old metal just has some kind of soul to it.
