Hit 10,000 pounds of trim in a single shift and it changed my mind about using a bandsaw for everything.

I used to think hand cutting was always slower until I broke down 200 pork shoulders in 8 hours with a breaking knife and realized I was overcomplicating things... anyone else find a certain cut just goes faster by hand?

Oh, bandsaws have their place for sure. But I've found a good breaking knife in my hand is just faster for breaking down whole pigs and shoulders. You get a feel for the seams and can just pop them apart without all the setup and cleanup. It's like the bandsaw is for volume but hand work is for when you actually know what you're doing.
