I was breaking down a whole ribeye primal at my shop in Fresno and noticed the box date was 11 days before it hit my table, which shocked me since I always assumed fresh meant 3 to 5 days max. Turns out the aging window is way wider than I thought and I had been rushing product I didn't need to rush. How do you all figure out the sweet spot for wet aged beef before it goes funky on you?
