My mom watched me dump half a bag of rice in a pot and said I was cooking for a ghost
Last Sunday I was meal prepping in my tiny kitchen in Cleveland and dumped 3 cups of dry rice into a pot like I always do. My mom was visiting and just stared at me and said, "who is eating all that, a ghost?" I told her it was for the week but she pointed out I toss half of it every single time because rice goes hard in the fridge by day three. That hit me because I have been doing this for like two years and probably thrown out $15 to $20 of rice a month without even thinking about it. So I switched to cooking one cup at a time in the microwave steamer my roommate never uses, and now I actually eat all of it. I also started freezing the leftover cooked rice in ziplock bags flattened out, and it reheats perfect. It sounds so simple but nobody ever told me and I just kept making a giant pot out of habit. Do you guys cook rice in small batches or do you make a big pot and freeze it? I want to know what actually works for people who have been doing this longer than me.
Man I felt this in my soul because I did the exact same thing for years and never once stopped to ask myself why I was making enough rice to feed a small army. My old roommate used to call my big pot "the cursed cauldron" because it just sat in the fridge getting crustier every day until I finally threw it out. The worst part is I knew it was happening and still kept doing it out of pure habit, so you are definitely not alone in this lol. Freezing it flat in bags is such a good move too, I do that now with any extra and it thaws so fast it barely counts as leftovers. Honestly the small batch thing plus freezing has saved me so much money and I eat way less sad crunchy rice now. Good on you for actually breaking the cycle because most people just keep dumping the pot and never think twice about it.
