My $3.50 lentil soup lasted me four lunches this week

Last month, I was really broke after paying my car insurance in Portland. I threw a bag of green lentils, an onion, and some spices from the back of my cupboard into a pot. It made so much food I didn't have to buy lunch at all. What's your cheapest meal that makes a ton of leftovers?

My go-to is a massive pot of chili with two cans of beans, a can of tomatoes, and the saddest looking pepper from the discount bin. I call it my "cardboard box chic" era because I ate it for a week straight.

Man, @caleb_stone, a whole week? That's some serious dedication to a single pot of chili. I get making a big batch, but even my students would stage a revolt by day three. That pepper must have been working overtime. Gotta mix in a grilled cheese or something to break up the monotony.
