I always thought you needed fresh herbs for flavor, but my wilted basil plant and a $1.99 jar of dried oregano from Aldi last week proved me wrong.
I was about to toss the sad basil, but instead I dried the leaves in my oven on the lowest setting for an hour, crushed them, and now my 'fancy' pasta sauce tastes just as good for pennies... what's your favorite dried herb swap?

Dried herbs lose all their flavor compared to fresh.

Nah @lilys82, that's a hard disagree. Dried oregano and thyme are actually better for a lot of cooked stuff. They need heat and time to wake up. Fresh herbs are great for finishing, but dried have their place. You just gotta know when to use which.
