Was a pellet snob for 5 years, then tried a stick burner in Tulsa
I always thought offset smokers were just for guys who like babysitting fires and bragging. Pellet grills gave me the same bark and juiciness, or so I claimed. My buddy in Tulsa let me run his Old Country Pecos last weekend for a brisket. First thing that hit me was the smell, real wood smoke, not that clean pellet exhaust. The temp swung 40 degrees and I panicked, but that brisket had a deeper red ring and the fat rendered like butter. It took 11 hours of feeding splits every 45 minutes. He just laughed and said, 'Now you know why I nap in the lawn chair.' I'm not selling my Traeger yet, but I get the hype now. Has anyone else switched back after getting lazy with pellets?
My uncle in Wichita has run the same Brinkmann since 2009 and swears the temp swings are what give his pork butt that candy bark. Dude still uses a charcoal chimney and a folding chair with a broken arm rest, no gadgets at all.
