Just hit my 100th brisket cook on the Offset
I started keeping track back in 2022 after I got my first real offset smoker, and I just pulled number 100 off the pit last weekend. Turns out my cook times have dropped by almost 2 hours on average since brisket #1, and I stopped wrapping in foil around brisket #40. Has anyone else noticed a big shift in their process after a certain number of cooks?

Bet you started spritzing less after brisket 50 too" - that's the part that got me thinking. I actually cut way back on spritzing around that time cause I noticed it was messing with my bark, especially on those longer cooks where you just want a solid crust. Did you find that dropping the spritz changed how fast your flats dried out compared to the point, or were you compensating with something else? I switched to a water pan and bumped my temp up a bit, but I'm still dialing in the balance.
