Appreciation post: I used to think a pellet grill was cheating, but a guy in Austin showed me his 16-hour brisket process last month.
He explained his precise temperature and smoke level changes every three hours, which convinced me it's more about the cook's plan than the fire source. Anyone have a similar switch on a different piece of gear?

Get that completely. Had the same hang-up about using a digital thermometer for years. Felt like it took away from the instinct, but it just lets you focus on the rest of the cook.

Oh man, that instinct thing is so real... I used to poke my chicken like I was checking a tire for air. Then I got a probe and felt like I cheated. But @danielmason is onto something with the control idea. It's not losing the feel, it's just moving that brain power to the seasoning or the sides instead of staring at the meat guessing. Let the tech handle the boring worry so you can actually cook.

That "cook's plan" thing is spot on. I felt the same way about sous vide for steaks until I tried it. The gear just gives you more control to pull off your idea.
